Nutella and Salted Caramel Stuffed Double Chocolate Chip Cookies

So apparently, nature decided to create a thing called wisdom teeth.

Yeah, that’s totally happening. I have a wisdom tooth growing in…

…and I’m completely terrified.

You’d think the key word – ‘wisdom’ – would imply knowledge gaining, and being waaay sassier than ever before.

But no.

As I had previously not known, wisdom teeth are actually apparently a nightmare. Maybe the name refers to the ‘wisdom’ you gain about the horrible experience you’re probably about to embark upon, once you’ve Googled ‘wisdom teeth’.

The Wikipedia page is pretty much 100% dedicated to how terrible they are.

The worst thing of all: this tooth only just started growing in like 3 days ago, and before that I was blissfully unaware of the fact that:

 a) Wisdom teeth can start growing in even when you’re 16 – my age :'(

b) It will most likely be a painful experience

So now, I’m just savouring these last few days / weeks before the suffering begins. I finally know how Barney feels after his slapbet with Marshall in How I Met Your Mother.

Oh gahd. What if it’s not over by Christmas :( I won’t be able to make and eat these heavenly things.

Please. Help. Me.

Anyways, on a less depressing, scary note: I made cookies! and filled them with super fine goodness, a.k.a nutella and that salted caramel I made a while ago.

How to make salted caramel – a step by step guide with .gifs

One thing that annoys me about recipes, espesh things like caramel, is that you can never SEE what the heck it’s meant to look like whilst you make it. Is it too brown? is it too light? Why did you not tell me it would start spitting molten-hot-sugar-goo at my face?


Problem. solved.




Ahh .gifs, I love them so much, they are my besties. (do you remember the toasted, ground vanilla bean tutorial? and the how to make pretzels .gifs? and the dripping ice cream .gif? Good times guys, good times…)

I hope this step-by-step guide will make you think so too!

No fuss, no burnt sugar, no burnt hands. Easy az.

And guys,  really if your not convinced yet: there are no thermometers involved here. Because seriously, who can accurately use those candy thermometers in a shallow pan of caramel? That totally does not work at all. Pitfall-and-a-half I say.

Snickerdoodle Cookie Topped Blueberry Doughnut Muffins

So you know when you’re sitting at your computer, reading some blogs, checking some stats, ignoring someone on facebook?

You’ve got Alt-j blasting in the background while browsing… it’s about to get to your favourite part of the song – and you’re singing along of course.

and..ooh, look a new post for you to read  – you can see it in the google reader preview page, pretty pictures…shift+ click that, add another new tab to the growing tab collection in chrome’s window. 😀 😀 😀


……….aaaaaaand then your computer dies.


Literally, from hero to zero in 1 second. No blue screen of death, no ‘Windows is Shutting down’ (dah na na na). Nothing to buffer to shock of losing everything good at that second.

The cold, dark reality hits you – how loudly/badly you were singing, how many tabs you actually had open. How annoying/amazing computers are.

That is Monday.

Yeah, so my computer died on Monday (literally the above story, that was 100% my Monday night). I figured out the problem, but it took me the whole of Saturday to do. Luckily my dad is a computer-backup wizard and so all my files are fine anyway :’) THANKS DAD!

But jeez, it makes you realise how important backing your hard drive up is. Also made me remember how awesome chrome is, because you can just log into it and get all your book marks back (I pretty much have thousands of recipes bookmarked – from that primitive time known as the ‘pre-pinterest’ era).

Pro tips right there.

Anywho, to make me feel better about wasting the whole of my Saturday on fixing my computer, I needed some cakey-goodness to re-energise me. I couldn’t be bothered picking what to bake;

and what do ya do when you can’t decide? MAKE EVERYTHING AS ONE BAKED GOOD.

Cookies? Muffins? Cinnamon? Dougnuts? – I believe the proper scientific term is ‘heck yes’.

A snickerdoodle cookie is literally baked on top of blueberry-studded doughnut-muffin batter. You end up with fluffy, melt-in-your-mouth blueberry muffin, with a completely crisp outer layer (from cinnamon-sugar-coating the muffin pan and from the cookie). What’s everybody’s fave part of muffins? The crispy edges, cinnamon-sugar crackled top?

Well: These have pretty much the best muffin top in the whole entire world – crispy, sugary, AH.MAY.ZING!

Self-Saucing Maple Pecan Cakes


Maple syrup and pecans.

Man, they are one good match – they’re basically made for each other. Am I right, or am I right?

I have recently (by recent I mean like 2 months ago) discovered the joy of pecan butter. It makes trips to Whole Foods EVEN MORE EXCITING (if that’s even possible): you get to turn on the nut grinder.


No that’s not some weird figure of speech. You (may) know what I’m talking about (probably not…). Those huge grinders filled with pistachios, pecans, almonds and peanuts, then you flick a switch and watch them get ground into a delicious butter. It’s like a self-serve froyo place – except a billion times better because you can’t make pecan butter and maple syrup toast with vanilla froyo.

But seriously – pecan butter on sunflower seed toast with a drizzle of maple syrup and a sprinkle of maldon salt. OH EHM GEE. Its like eating pecan pie for breakfast.

Anywho, while I wait for Maple Pecan Pie Day (a.k.a Thanksgiving) to roll around, I have to find other ways to eat as much maple-pecan food as I can.

That’s why these cakes are here.

I made a video for you again (and some .gifs – you know by now how obsessed I am with them)! and got my super-sassy-awesome-youtuber-friend Bea (a fellow maple adorer) to help me out .

She mostly kept me entertained throughout shooting while we chatted about ginger-bread-latte-scented candles, and the pronunciation of pecan; ‘pee-can’ or ‘peh-cahn’ . Although that quickly turned into us saying bacon as ‘bahcahn’  pretty much all day.


These are sooooo simple, and literally take 45 minutes to make from scratch – and that includes baking time!

What you end up with is a warm pecan and brown sugar cake, floating on a pool of caramelised-maple sauce. I topped mine with (no, not cinnamon..) whipped cream which is incredibly easy to make (see the recipe notes) and a sprinkle of pecans.

This is good stuff people.
