White Chocolate Peppermint Mocha Cookies (4 ingredients, no bake, 15 minutes)

Okayyy

So I may have said I would post these last week, but then things got cray, and I posted a guest post for s’mores bars instead, sorryyy;

you probably know by now that my life is as hectic as a whole bottle of sprinkles charged with static electricity (those sprinkles would be flying eeeevrywhere).

But I’ve also been working on another post, which is coming your way on Wednesday (a special, birthday post :O )  and if you be following me on instagram or twitter, you probably already know what it is that I’m posting 😉

Lets turn the conversation to cookies (okay, I say conversation, I really mean: me talking and you having to listen to me ramble on about my life)

Two of my bestest friends are obsessed with peppermint mochas from Starbucks.

It’s the only thing I think they order from Starbucks, all. year. round.

They’re pretty crazy,

Crazy-amaze-y.

Hah, oh rhyming, you never get old :’)

So naturally, when I was mixing up minty chocolate for my thin mints, I heard their voices telling me:

“Izy. Hey. Hey Izy. Izy. You know what would go great with that minty chocolate combo you’ve got going on there? COFFEE. ADD SOME FREAKING COFFEE IZY. DO EHT.”

so I did

and it was brilliant.

and I told them about the cookies,

and I posted pictures on instagram, and their facebook walls,

and I said they could have some.

Buuuut I had forgotten that I’d promised them to my mum for her book club, sooo :/

 

They didn’t get to eat any…

…but, as they say “It’s the thought that counts” – although, I think if I said that to them, they’d probably make me buy them peppermint mochas.

Venti peppermint mochas (<— that is real talk right there, no one pulls the Venti card unless they are getting seeeerious)

 

I, on the other hand, got to eat pleeeeenty of them (you know taste testing, quality control, making sure the chocolate was set, photos…) MWAHAHAHA

so I can testify that they were deeeelish!

White Chocolate Peppermint Mocha Cookies (4 ingredients, no bake, 15 minutes)

Follow the exact same instructions as with the Thin Mints, but with the following changes:

– use white chocolate instead of semisweet (you could use semisweet though, ngl, it would probably be awesome too)

– you’ll also need about 3 tbsp of coffee grounds – sprinkle a little onto the chocolate-dipped oreo before the chocolate sets.

– I also sprinkled some chocolate flaky sprinkle things, and crushed candy canes on some of the cookies – that was more for decoration rather than flavour, but if you’re feelin it, go for it!

      haha, maaaan I ALMOST did, but I think some weird inner sense (I think it’s called ‘self control’..I dunno, I don’t use it much) managed to stop me…so I just ate more oreos instead 😉

    I’m obsessed with peppermint mochas too, but I find they taste best during the holiday season. But white chocolate peppermint mocha cookies… now those sound good any day of the year. And, the touch of coffee on top – perfection.

    Oh my, these all looks so good and delicious!! Chocolate + coffee = perfection. Adding coffee extract to chocolate makes everything much more better, or so I heard.

    Hey Izy – just found your blog through Pinterest. I just wanted to tell you that in past two years (of blogging) this is for the first time that I’ve got so inspired all over again. Absolutely beautiful photographs and very well executed recipes. Baking is my favorite too – I think its the best subject to photograph. Your videos are very creative as well. I am so glad I found your blog. The potato wedges with sriracha bake in the oven as I type this message. :)

    These and your thin mints are both so cute! I’m obsessed with peppermint mochas too, so I’m assuming they must be right up my alley. I just have to convince myself that it’s a good idea to melt white chocolate again, right?
    And venti Starbucks? That is getting serious. I once ordered one by mistake (don’t ask me how grande comes out of my mouth as venti), and I didn’t know what to do with it all hah!

      thank you Alexandra! ahahah get in there with the white chocolate, do ittttttt (this was one of my ways of using up that kilogram I have). It’s like buying designer clothing – serious commitment right there!
