Guest Post: Strawberries & Cream Amaretti Cookies {gluten free}

Hellooo mah peoples!

I’m ultra delighted to be guest posting over on The Vanilla Bean Blog today (one of my favourite blogs around), with some super summery cookies!

I was inspired by the classic summer pairing of Strawberries & Cream, which I thought would be perfect atop a chewy amaretti cookie (I was so right. It was delish). They’re pretty simple to put together, and also are gluten free! So click on over for the recipe and more photos :)

I am going crazy for them, it’s finally time for fruits and after months of basically only apples and bananas, you’d better believe I am now becoming the fruit queen! haha
It’s barely ‘summer’ here though, still grey skies and infrequent rain down-pours :/

Found the best app for sharing recipes ever! It’s called Heirloom Recipes my mother just got it today and emailed me a recipe and I got the free version to try it and OMG I imported the recipe right into the app no typing or anything! The email had the link to the free one: https://itunes.apple.com/app/id617619870. I’m going to put this recipe in it and send it back to her so she can make it for my dad. This is the perfect gluten free recipe for mom to make him seeing that is is simple to make and yet still so delicious. Thanks!!!

I just mad these for a 4th of july party…turned out really well….everyone loved….followed recipe expected i just used raw almonds not blanched so omitted the almond extract….great, light and fluffy!
