Chewy, Chocolate Chip, Coconut Granola Bars {GF, Vegan} and Pecan-Raisin Cinnamon Swirl Bread {Vegan} So I’m about to leave to go festival-ing at T in the Park (praying that I’m not going to get too drenched by any downpours when I’m there) for the weekend. I’ve made a couple of things this week which I had zero intention of blogging, I just instagrammed them and thought that was it. However a few people asked for the recipes and my no.1 hate is typing out recipes in Instagram comments so I thought I’d just give you a short, to the point post.

Flourless Browned Butter Brownies {Gluten-Free + Grain-Free}

It’s no secret to people who know me that I am a stress-eater.

PMS-ing: Time for chocolate.

60 billion pieces of homework due for tomorrow: Give me all of the shortbread please.

Exams: Ima cry-eat this brownie.

And as a particularly daunting round of exams is looming, it probably won’t be surprising to find me drinking endless mugs of tea alongside all of that food, either.

Flourless Browned Butter Brownies {Gluten-Free + Grain-Free}

I find it easier to control my insane sugar cravings during these times by trying to bake things which happen to actually make me feel full. Eating a regular brownie never makes think ‘wow I am so stuffed’. It’s more like ‘that brownie was a pre-brownie trial round. Now for the real thing, gimme another good sir!’.

And that’s why I often use things like flax seeds and oat flour when baking – the fiber and protein (and healthy fats in the flax seeds) are what keep me satiated so I don’t end up gorging.

Another ingredient akin to those I just mentioned is coconut flour. It’s basically the dried pulp leftover from making coconut milk. It is really high in fiber (because that’s pretty much all that it is) with some protein and good fats in there to boot. It does have a coconutty aroma but the flavour is easily masked when baked with ingredients like chocolate…for example…

So if it’s such a cool ingredient, then why is this one of the first times I’ve mentioned it on here?

Well, the frustrating thing is that coconut flour is a pain in the arse to develop recipes with. It absorbs crazy amounts of liquid and has no real binding quality so usually requires a LOT of eggs to go with it. I’m not a fan of overly eggy textured desserts (i.e. souffles or custard-like things) so I haven’t used it much in the past.

When I was looking through my friend Josh’s new book The Slim Palate Cookbook (full disclosure, that’s an affiliate link), I noticed he’d used coconut flour in a brownie recipe. I had a bag of coconut flour in the cupboard (and, at £6 a bag, I was like ‘yeah okay lets do this, use up some coconut flour!!’) so decided to give the recipe a go as it looked normal for egg quantities and the picture was making me pretty hungry.

Holy woah they’re good. They’re not as dense as traditional brownies, I think due to the use of coconut flour and small amount of baking soda, and have about half of the amount of sugar. Of course I went all classic food blogger and browned the butter before mixing in the rest of the ingredients. I amped up the chocolate flavour too, by sneaking some extra cocoa powder into the batter ;)

Verdict: Now I know what I’m going to be using the rest of my coconut flour for.

If you don’t have coconut flour/can’t  get it/ don’t want to spend dolla on a bag for one recipe (I wouldn’t blame you) then you can sub in almond flour (see the recipe notes) which also has a healthy fats, protein and fiber. Win win. We all get filling brownies. Hooray!

Hola chiquitas/chiquitos, I’m in Spain atm, which is why my pinterest/instagram have stopped for the week, but thanks to the funky internet world I’m able to pre-write a post that can be automatically published whilst I’m away.

Like a LOT of ice cream photos (there were more, I didn’t think you’d be too thrilled if I uploaded them all..)

It’s a win-win situation.

I had the pictures of this ice cream on my instagram a while ago, I don’t think anyone guessed the final flavour. It’s pretty obvo that it’s pistachio, and brownie. But it’s also MINTAYYY! Heck to the yes.

Pretty much a mix of my three top flaves – mint choc chip, pistachio and brownie.

Side note: the brownies look super dark, basically black in the photos, because we had no normal cocoa powder left so I ended up using the Hershey’s MEGATRON DARK one instead (I know ‘megatron dark’ is not the real name of the cocoa powder, but I can’t remember what its actual name is and cba to go downstairs to check)

Also side note: my recipe makes such a good amount of brownie chunks, I think about 3 or 4 brownies worth. So you don’t have to do the ‘dig-through-the-container-to-find-and-eat-all-the-brownie-chunks’ thing that I um.. totally don’t do….. :/

I was also a keen bean and dipped the ice cream cones in chocolate (70 percent ofc, who do you think I am) and chopped pistachios. I haven’t included this step in the actual recipe, because I think it’s pretty easy to tell how  and what I did. Plus I doubt anyone is as keen as me to decorate their ice cream cones.

I also painted my nails SO COOL-LY time I made this ice cream, it was so sparkly and amaze. Chipped as always. Nbd. 

As I type this, I have red sparkly nail varnish on and it makes me feel like Dorothy’s shoes in the Wizard of Oz (totally rad right?)

So also what happened when I was shooting this was that the ice cream started to melt majorly quickly (we’ve been having a heat wave and I am not adapted to deal with this heat. Nor is the ice cream). Then the random chocolate that I’d drizzled onto the ice cream just literally fell off.

You can see it in the above photo. It looks like a spider.

I think it’s cute.

I also now want to make more chocolate-pistachio spiders. Don’t judge, they are delicious.

I was kinda scared to get back into the whole styled set up, seeming as I’ve been used to photographing things this way pretty much once a week, for almost 2 years (“whattttt??” mate I know, it’s almost been two years now. Totally weird.), and then just having this month long break from it. But I think it was good for me to have a break; editing photos in lightroom was actually more enjoyable again, rather than being a mega task and a half.

I just got to chill, edit the photos and watch some Breaking Bad (which is SUCH a good show. WOAH.).

What made everything even better was how stress free and ridoncs fast it was to make these. They’re basically like peanut butter cups, but WITH pretzels thrown in.

They’re actually even easier to make than peanut butter cups because there’s none of that annoying chocolate coating of multiple paper liners going on; you just put it all into the pan and BAM! Crunchy, salty-sweet candy bars.

Cos, seriously, when those hot days (which, sadly, have been pretty rare here recently..) arrive, and you’re all “no ovens. no. no ovens. please. don’t turn that oven on. No seriously. What are you doing, turn the oven off, TURN IT OFF!!” (I’m hoping you know what I mean here, haha), but you want sugar, and that jar of raisins is not the sugar fix you need, I have to say that no-bake desserts are simply going to happen.

Secondly, my computer…

My dear, sweet, computer (I liked to call him Sam..well, I call many machines Sam: the 1950’s Kenwood stand mixer (uh, yeah, not even joking), ice cream maker and mini food processor, but whatever.)

decided that 5 years was enough time to be on this crazy planet, and left me yesterday.

As before, I had everything backed up, so I’m good to go; however I still feel a little lost without my Packard Bell (hah, yeah, you might be able to tell why it broke so much now…)

BUT ANYWAY, enough of that, life goes on (and it goes on with chocolate, heh heh heh).

So if you had scrolled to the bottom of the deep dish cookie post, you probably would have seen one of these totally photo bombing the last picture.

I’m sorry, but it just happened.

I think I just go on recipe trends.

There was the whole 2/3/4-ingredient thing, and now I’m making all these single-lady vegan things.

If you think I’m dropping more hints or something, I’m not I’m not I’m not.

I am a single-lady, buuuut I’m not actually trying to advertise that :/

and I’m not a vegan (it’s just convenient to not use eggs for single serving recipes, plus it means more people can make these recipes!), but it is nice to give that buttah and white sugar a rest ;)

But, whatever, I have this to eat. I don’t even care about anything else.

(Note: I slightly modified the above image because apparently some people can’t actually read/ don’t {want to} read the written recipe where I do say that honey isn’t vegan. I take the photos for the recipe using ingredients I have on hand at the moment that I’m shooting. This time I used honey. It was merely out of convenience for ME – someone who isn’t vegan, but is INTERCHANGEABLE with vegan sweeteners like maple or agave syrup as, again, I have specified in the written recipe below. The pictures are just a piece of graphic designnot meant to be used in place of the written recipe which contains the METHOD, notes and ingredients. Sorry this is a long note, but I thought that people would be able to let go of the fact I used honey in one photo – {ooh rebel, I know} but apparently, 2 people so far can’t.)

I literally said, out loud after making this “I don’t even know what I was doing before this.”

As in: this is the best thing ever.

(the .gif makes it look hard to dig into… not really molten-y; that’s because it had been cooling for about 30 minutes whilst I was shooting, by then! It basically turns into a piece of fudge once cooled, pinky promise)

It’s so easy to make, and so delicious that I want to cry.

You mix it in the freaking dish people – in the dish! You don’t have to wash up anything apart from spoons and whatever vessel you decide to use to mix/bake/eat it up in. Easy as. NOW GO, GO TO YOUR KITCHENS AND MAKE THIS. IMMEDIATELY.

Single-Lady, Chocolate Chip Cookie (Vegan with GF + PB cookie variations)

Damn, that’s a long title, but I think that the cookie deserves it to be honest:

You can make yourself a deep-dish, semi-healthy (I used coconut oil, whole wheat flour, bittersweet chocolate and maple syrup. No white sugar or butter!) cookie/blondie thing for only you (so you don’t end up eating a million cookies), it basically only takes 15 minutes and one dish (you mix it up in the dish it’s baked in).

So we’re doing this, yeah? You’re in. Good. Step by step I’ll take you through the ‘anatomy’, if you will, of this cookie:

-Deep-dish: well, that’s what it is, it’s baked in a dish, that’s deep for a cookie! It’s more like eating a blondie to be honest, but that doesn’t sound as good..
-Single-lady: it makes enough cookie for one single ladeh, i.e. single serving (if you baked it like a cookie, it’d probably be like 2 medium cookies..that’s one serving right!? right?)
-Salted: salt in it, salt on it. Salt. As we all know, salty-sweet is delicious and has to come up at least twice a month.
-Whole Wheat – I used whole wheat flour! Who would have even guessed? Just making it a little bit better for all of us ;)
-Chocolate chip cookie – …I think you’ve got that
-Vegan – not an egg in sight! I also used coconut oil to keep it vegan, but if you’re a butter gal (I totally normally am) go for it, I’ve tried it and it’s just as awesome.
-Gluten free variation – right, so I tried the recipe out just straight up substituting ground almonds for flour. It didn’t work out. It was incredibly delicious but more like eating caramel rather than a cookie. So I made a few changes; reducing the sugar and using almond butter instead of coconut oil (less fat = less gooey, I figured), and oat flour (just ground up oats) and it worked!
-Peanut Butter Cookie variation – following on from those gluten-free adaptations to the original recipe, I used peanut butter instead of almond butter, to make a peanut butter cookie! Wooh!
-The gluten free, nut butter variation can be made using whole wheat or a.p. flour too, it’s just not as gooey as the coconut oil version.

It’s been a very busy half term,

I went to the Brits! I saw JT make a dramatic entrance with a chandelier-curtain-thing, I shuddered through One Direction’s song, Mumford and sons and Muse played kick ass songs and I noticed that undeniably sassy look on Taylor Swift’s face when she ended ‘I knew you were trouble’ (Harry Styles was the room…it was majorly awkward),

I went to the after party; I got free cotton candy (the guy who was making it had cotton candy ALL OVER HIS FOREARMS. It was hilarious.) and a white chocolate skull from some insane doctor actor. However the party full of mid-30-year-olds awkwardly dancing to remixes of the black-eyed peas, so we left after half an hour.

(side note: is it possible to be in love with a photo? WHY DOES THIS HAPPEN EVERY WEEK. At least now my friends know what my phone, computer and ipad background will be until next Sunday.)

They’re essentially a coconut macaroon topped with chocolate, marshmallows and a hidden roasted banana layer.

It’s roasted, people. Do you know how good banana tastes once it’s been shoved into an oven for half an hour?

What is a s’moreo? Well it’s just a s’more made with oreos instead of graham crackers.

But then I transformed into a cookie bar, and layered with peanut butter and chopped peanut butter cups too.

Yesssssssss.

When I made these, I think that I just needed some soul food – and I’m pretty sure that these bars are what it would look like if I had a soul,

My friend and I ended up spending a good amount of time talking in Napoleon Dynamite quotes this week, (and yes, yes we’re learning his dance) in case you were wondering about that youtube clip above……. (this video made me cry, several times; If you have no idea what I’m talking about because you haven’t seen Napoleon Dynamite yet, GO DO IT NOW – well, after you’ve made these bars actually)

5 layers of pure enjoyment: crushed oreo base, peanut butter, milk chocolate, toasted marshmallows, chopped peanut butter cups. ( I totally tried writing the text on with chalk, and it TOTALLY failed.)

Minimal skill, time and ingredients required = maximal enjoyment.

Fair warning though – you might want to tell people that the bars contain oreos….that dark base can be extremely misleading (i.e. I think everyone thinks they’re majorly burnt when they see them)
